Serves 4. Prep time – 10 minutes, plus chilling. Cook time – 5 minutes.
Ingredients:
- 1 lemongrass stalk
- 4cm (30g) fresh ginger, sliced
- 1/4 cup (90g) honey
- 4 cups (1 Litre) water
- 3 Tbsp (15g) Zest Tea
- Ice
- Handful mint leaves
- Soda water to taste
Method:
- Trim the bottom of the lemongrass and carefully peel 4 outer layers, set aside to use later. Finely chop the remaining lemongrass.
- Bring the lemongrass, ginger, honey, water and tea to a simmer in a small saucepan over medium-high heat. Remove from the heat, cool slightly before refrigerating to chill completely.
- To serve, strain the tea through a fine sieve and divide among four tall glasses. Add ice and mint leaves then top with soda to taste. Serve with reserved lemongrass for a swizzle stick.
