Salmon Curry with Cauliflower Rice Recipe

Serves 4 people
Ingredients
300 g Tassal Fresh Tassie Salmon Fillets, cut into bite-size pieces
1 capsicum, sliced
2 bunches of broccolini, chopped
1 large carrot, chopped
1/4 cup red curry paste
1 tsp minced ginger
1 tsp minced garlic
270 g light coconut milk
1/3 cup hot water
2 tbsp lime juice
2 tsp fish sauce
1 tsp honey
1 large cauliflower, pulsed into rice
Method
- Heat a wok with a small amount of extra virgin olive oil. Pan-fry the salmon for 2-3 minutes, turn it over and cook for another 2-3 minutes. Remove and set aside.
- Add curry paste, ginger, and garlic to the pan. Stir for 1 minute. Add coconut milk and water. Once boiling, add broccolini, carrot, and capsicum. Cook for 3-4 minutes. Reduce heat to low and add fish sauce, lime juice and honey. Stir well. Place salmon pieces back in and turn off the heat.
- Heat cauliflower rice either in the microwave or in a non-stick pan on the stovetop.
- Serve curry with cauliflower rice.
