We chatted with Matteo from La Macelleria about the launch of their new venue in 25 King Street, Bowen Hills:
Tell us about La Macelleria
La Macelleria was born in Bologna in 2013 with the plan to move to Australia. It means the Butcher Shop because we renovated an old butcher shop maintaining the main characteristics and we decided to play with the name
What motivated you to start La Macelleria?
In Italy at that time was very hard to pursue a career (I come from a marketing background) and also to set up your own business so we decided to using our economics background to develop a business around one of our favourite Italian products.
What do you love about gelato?
Gelato is a little and not expansive treat. A very good Gelato is an experience and gives you that 5 minutes of happiness out of the stress of everyday life.
What’s the secret behind an authentic Gelateria?
Don’t compromise on quality, use very good ingredients, keep it natural and don’t use any additives or chemicals. Enhance the flavours, make it from scratch from the raw materials to the final product. 95% of the gelateria skip most of this passage to have an easier life. Even in Italy. We don’t do that.
What are your top 3 most popular flavours?
Definitely Salted Caramel, Bacio (choc hazelnut) and Stracciatella (Choc-Chip)
What’s been the highlight of your career so far?
It’s been amazing seeing La Macelleria growing so fast in the last couple of years and that’s because we put together a fantastic team that works incredibly hard all together toward the same goal: make the best Gelato.
What do you love most about what you do?
As a Gelato Chef, I also do consultancy all through South East Asia, helping those countries with developing a Gelato culture. I love to try different ingredients and experiment with different flavours. As business owner, I love to take risk and challenges, I always look for new opportunities.

The concept of “La Macelleria” was born in Bologna, the Italian capital of Gelato. In 2012 Matteo and Matteo, both with a background in Economics decided to follow their own dream and export the real Italian Gelato to Australia. They wanted to bring the heart of their city, Bologna, with its inimitable culinary tradition to Australia through their Gelato.
