
Sydney’s only dedicated craft rum distillers, BRIX, have teamed up with iconic Sydney bakery Bourke Street Bakery to combine their passion for flavour, local ingredients and the local community into a deliciously decadent, sustainable and limited edition spiced rum called Trail Mix w/ Bourke St Bakery.
The limited-edition rum has been expertly crafted, matured for 3 years in locally sourced American oak stout casks and is infused with banana bread, almond croissants, figs, lemon peels and pear skins; all bi-products from the Bourke Street Bakery kitchen. The addition of Allspice, peppermint gum and liquorice tie these flavours together and give us a bold rum to level up your cocktails this season.
“Rum has such a rich history, but in Australia, we don’t even scratch the surface. In 2022 food waste was one of the most significant hurdles in achieving sustainability targets globally, we wanted to highlight how we can use the waste from one of Sydney’s most sustainable bakeries to create a beautiful, buttery artisan rum in the hopes that other local businesses will take inspiration to give waste produce a new life.” BRIX co-owner Damien Barrow explains.
Brix x Bourke Street Bakery Old Fashioned Recipe
Ingredients
60mL BRIX Trail Mix w/Bourke Street Bakery
15mL Sugar Syrup
4 Dashes Angostura Bitters
4 Dashes Orange Bitters
Orange Twist for garnishing
Method
- Combine the bitters and sugar syrup in a glass.
- Add the Bourke Street Bakery Trail Mix.
- Stir.
- Add one large ice cube or three or four smaller cubes. Stir until chilled and properly diluted, about 30 seconds. Slip an orange twist on the side of the cube.
