Satay Chicken Skewers Recipe

Satay Chicken Skewers is one of my all-time favourite dishes. You can swap out the chicken for different meat. You might like to serve with a salad, jasmine rice or cucumber relish.

If you’re using wooden skewers don’t forget to soak them for an hour to prevent them from burning during cooking. We prefer to use metal skewers these days.

Satay Chicken Skewers Recipe

Time: 1.5 hours (including marinating time)
Serves: 4
Dairy-Free/Gluten-Free (optional)

Ingredients

500g chicken tenderloins
1 cup Mayver’s Satay Sauce
Crushed peanuts to serve
Coriander to serve

Mayver’s Satay Sauce
1/4 cup finely chopped onion
1 small garlic clove, finely chopped
1/2 cup Mayver’s Smooth Peanut Butter

1/4 cup water
1 tsp hot chilli sauce
1 tbsp soy sauce or tamari for gluten-free
1 tsp honey
2 tbsp lime juice

Satay sauce method

  1. Heat 1 tbsp olive oil in a small saucepan.
  2. Add the onion and garlic to the pan and cook on low heat until soft, ensuring no
    browning is occurring.
  3. Add Mayver’s Smooth Peanut Butter, honey and water and mix until combined.
  4. Turn heat down to low and add in the soy sauce and lime juice, and mix until
    combined, removing from heat quickly after.

Satay chicken skewers method

  1. Marinate the chicken tenderloins in Mayver’s Satay Sauce for a minimum of 1 hour.
    Refrigerate whilst marinating.
  2. Once chicken has marinated, place a skewer through the centre of each tenderloin,
    allowing at least 5cm of the skewer to remain bare.
  3. Heat a frying pan with 2 tbsp of oil of choice.
  4. Place the chicken satay skewers in the heated pan.
  5. Cook each side of the tenderloins for approximately 4 minutes or until cooked
    through.
  6. Remove skewers from heat and drizzle with extra satay sauce.
  7. Top with crushed peanuts and coriander to serve.
