
Black Hide by Gambaro’s is a must-try fine-dining experience with views over the Brisbane River.
The entrance is on the right-hand side of the Treasury Casino’s main entrance. It’s a little bit hidden from the rest of the casino, but once you have visited, you’ll be keen to go back.
Each quarter there’s a new seasonal menu featuring fresh local and sustainable ingredients and produce. The Spring Menu features Hiramasa yellowtail kingfish with fermented chilli, sesame and crème fraiche, plump and juicy scallops with orange saffron butter and toasted pistachios, and free-range pork belly served with baby gem salad and chimichurri. Be tempted by the spanner crab and sweetcorn tortellini with a delicious shellfish bisque.

It’s no wonder my husband said his Wagyu steak was the best one he’d ever eaten! You can order one of Black Hide’s wide selection of steak. There are 15 cuts on the menu ranging from a marble score of 3+ to 9+. It steak will be cooked to your liking and will be served alongside Wagyu fat roasted potatoes with garlic and rosemary. Then select your house-made sauce including crowd-favourites red wine jus, peppercorn, béarnaise or mushroom sauce.
Executive Chef Thomas Mumford says, “We’ve been working with Stanbroke Beef for over eight years now to source quality cuts of beef, and we do all our meat and fish butchery in-house every day. We’ve also begun pickling, ferment and curing, which you’ll see a lot more of on the menu, and I’m excited to continue experimenting with the amazing produce that the local region has to offer.”
“I find inspiration all around, from the foods I like to eat, to what vegetables and fruits are in season. Our restaurant manager is vegan, so on the new menu I’ve tried to create dishes that can be easily made vegan including a new dessert – a coconut parfait with pineapple salsa and Vietnamese mint granita that goes perfectly with a crisp white wine,” Mumford says.

I enjoyed my pork belly with some sides of heirloom tomato salad with fennel, labne and oregano, and smoked carrots with tarator, pomegranate and almond and spiced eggplant with garlic yogurt and coriander.
There’s a mid-week lunch set menu for $79 per person with entre of tomato carpaccio, main of wagyu rump, Gambaro’s daily fish or free-range pork belly and a seasonal grilled stone fruit sorbet with cantucci (Biscotti di Prato).
We’re looking forward to trying the popular beef short ribs and Italian meatballs and finishing with a coconut parfait with pineapple salsa and Vietnamese mint granita.
You can pop into the bar for a drink, and I’m pleased to report there are ample mocktails to select from.
