
The Inchcolm Bar is located on the ground floor of a beautiful Neo-Georgian all-suite hotel.

The original owner of The Incholm, Marie Thomson was a well-known Brisbane socialite, who loved hosting parties with free-flowing Martinis. Her husband, Dr John Thomson, was a pioneering surgeon who contrasted the building in 1880.
You can enjoy the golden age of bistro dining with a carefully crafted cocktail menu. You can pop in for a wine or beer, or a something from their selection of spirits including gin, vodka, mezcal, whisky, rum. The bar is open for full drink service seven days a week from midday until late.

We popped in to try the three-martini lunch. The current menu includes:
- ‘The Inchcolm Martini’ created with Ketel One Vodka, Sipsmith London Dry Gin, Fennel infused Dry Vermouth Orange Bitters and Olive Juice.
- ‘Cucumber Rose’ with Cucumber infused Tanqueray Gin, Marie Brizard Elderflower, Rosewater, Prosecco, Cucumber ribbon and rose petal.
- Spring Hill
The menu includes entrees of escargot with baguette, Chicken liver Pater, grilled sourdough, cranberry jam, or three natural Tasmanian oysters. The mains menu includes Steak Frites, shoestring fries and port wine jus, Moreton bay bug spaghetti with cherry tomatoes chilli and pangrattato, or market fish with brown butter, sauteed beans, and crispy Tuscan potatoes, or potato gnocchi with creamy mushroom ragu, arugula, truffle oil and pecorino.
I was pleased to be able to try escargot as it’s hard to find. I enjoyed my steak with shoestring fries. My dining companion ordered oysters and market fish of salmon and found both to be delicious.
