Smoked Salmon Mini Frittatas Recipe

Ingredients
150 g Tassal Cooked Tassie Salmon Naturally Smoked, flaked
8 eggs
4 egg whites
1/2 red capsicum, diced
60 g baby spinach, chopped
1/4 cup crumbled feta
2 tbsp fresh chives
Black pepper
Extra virgin olive oil spray
Method
- Preheat the oven to 170°C fan force. Spray a 12-muffin tin with extra virgin olive oil.
- Add spinach, capsicum, then Tassal Cooked Tassie Salmon Naturally Smoked to each tin. Sprinkle feta and chives on top.
- Whisk eggs, egg whites, and black pepper together in a large bowl with a pouring spout.
- Pour egg mixture evenly on top of salmon and vegetables.
- Cook for 15-20 minutes (oven times may vary). Let cool slightly before removing from tray.
