I fulfilled my Willy Wonka fantasies at New Farm Confectionary’s first chocolate making workshop. The classes are held in the Newstead commercial kitchen.
It was hard not to have fun. The music was playing and my fellow classmates were bopping along as we sipped on champagne. Everything you need is provided, including aprons.
Jodie lead us through how to make a basic chocolate bar. The moulds are ultra-tough. You may like to test your painting and decorating skills here. Otherwise, you can just drizzle or flick the coloured cocoa butter and gold glitter on the top of your bar.
After the first layer has set, then you can add the pre-melted chocolate and your selection of different sweet ingredients. The handcrafted confectionery are produced in-house – think honeycomb, popcorn, dried raspberry, pink and white marshmallows.
Handy Tip: The fewer fillings you use, the more delicious chocolate your bar will contain.
The chocolate is then set in the fridge before you can pack it in a snazzy gift box and take it home. We made eight delectable chocolate bars in total. We learnt some more about chocolate and had the opportunity to ask questions.

New Farm Confectionery was created after a trip to the confectionery filled city of Paris, France. For many years I have realised that in Australia we tend to relegate confectionery to the kids. All those garish, artificially coloured sweets that do not taste like anything that is natural. Where, in Paris, there are many shops dedicated to confectionery for adults. Beautiful, bountiful shops that are bursting with marshmallows made with only the finest ingredients, delicious salted caramels that are packaged with minimum fuss and appeal to the adult eye.
All of these scrumptious sweets made me all too aware that we are missing out in Australia. These delicious goodies aren’t just for children. We should have yummy treats that we can enjoy without feeling guilty. They should be made with the highest quality of ingredients, flavoured with delicious fruit and be packaged with the adult buyer in mind. I think I have come up with a great product. Try them yourself and embrace your inner child who misses the luxury of a little sweet, now and again.
