
Susie Burrell has created a dietitian-approved summer breakfast recipe to fuel your body for the day ahead. These use Mayver’s new range of limited edition spreads, including Manuka Peanut Butter and Berry Peanut Butter. You can substitute these for your favourite peanut butter.
Peanut Butter and Berry Pancakes Recipe
Time: 20 minutes | Serves: 1
Ingredients
- 2 eggs
- 1/3 cup oats
- 1 ripe banana
- 1 tbsp Mayver’s Limited Edition Berry Peanut Butter
- 1/2 cup fresh raspberries
- I tbsp mixed dried berries
- 1 tbsp coconut flakes
Method
- Combine eggs, oats, and banana in a blender. Blend until smooth.
- Heat a frying pan on medium-high heat. Cook pancakes for 1-2 minutes on each side, depending on size, until all of the mixture has been used.
- Drizzle pancakes with Mayver’s Limited Edition Berry Peanut Butter, and top with raspberries, dried berries, and coconut flakes.
