Where to Try Westholme Wagyu Beef in Brisbane

Westholme is a type of Australian Wagyu that I recommend you try once in your life. 

Westholme have a diverse range of large properties from Brisbane in Queensland to Darwin in northern Australia. Their cattle graze freely, moving across a range of different terrains. 

The herd is bred, grown and managed across 22 stations in Queensland and the Northern Territory. These stations include South Galway, Wylarah, Aronui, Glentana, Rewan, Goonoo, Carrum, Dalgonnaly, Wondoola, Canobie and more. 

Calves are raised by their mothers, and family groups are allowed to stay together. The cattle graze on native plants such as Mitchell Grasses, Bluegrass, Native Millet and Minty Pom-Poms. 

Wagyu cattle are historically working animals. They are prized for their high intramuscular fat content or marbling. Marbling refers to the rivers of fat running through the muscle, which gives Wagyu beef its signature tenderness and dissolving mouthfeel. 

The Westholme Wagyu herd have been refined over the past three decades to adapt to the unique environment and produce Australia’s finest Wagyu. 

Perfecting Your Wagyu Striploin at Home

  1. Let your steak rest for 20 minutes at room temperature before grilling.
  2. Preheat your grill to high heat.
  3. Season your steak well with salt before and during searing.
  4. For a medium steak, sear for 2-3 minutes on each side to get a nice crust.
  5. Reduce the heat to medium and cook for about 3 to 5 minutes on each side, assuming your steak is approximately 300 grams.
  6. Take the steak off the grill and let it rest for about 5 minutes.
  7. Carve, season with black pepper and condiments of your choice and enjoy. 

Tip: Season with 100% Australian sea salt and Mountain Pepper Blend from Olsson’s Salt.

Westholme Wagyu is exported overseas and available to try in the following Brisbane restaurants: Agnes Brisbane, Bianca, Gerard’s Bistro, Honto, Moo Moos, Naldham House and Same Same.
