Chef Josh Lopez, shares his mouth-watering tropical Eton Mess recipe. This dish is perfect for Queensland’s summer weather. You can serve this British inspired dessert after a casual backyard barbeque or along with a more traditional roast dinner with the works.
What’s your favourite summer recipe?
I am a pav fan. And though it’s British; Eton Mess is a bit like a posh way of doing single serve pav and to have a tropical Eton Mess with passion fruit and pineapple, meringue with cream is definitely a favourite.
Eton Mess usually consists of fresh strawberries and whipped heavy cream and is a great way to use up broken meringue. Mango or bananas would make a great alternative.
Fun fact: This dish is believed to originate form Eton College and is often served at the annual cricket match against the pupils of Harrow School. The myth is a giddy Labrador sat on a picnic basket and squashed a strawberry pavlova inside. (A totally fictional account but it does make a good story).
Tropical Eton Mess Recipe
Ingredients
meringue
passionfruit
pineapple
heavy cream
Method
- Cut up the pineapple into bite-size pieces. Cut the passionfruit in half and scoop out the insides.
- Whip the cream until lit forms soft peaks.
- Break the meringue into chunks and then lightly fold in the pineapple, passionfruit, and cream.
- Spoon the Eton mess into individual dishes.
This dish looks good served as single serves in a glass or one large glass bowl.
