We went to Pony Dining to taste test Head Chef Chris Mann’s new Winter menu.
Standouts from the meal were for entre the wagyu pastrami with ketchup, pickles on puffed rye, for main a big bowl of bbq pippies and clams, topped with garlic shoots, chilli and sesame. To finish I can recommend the dark chocolate tart, with a middle layer of Grand Marnier and topped with a scope of milk gelato.
I also enjoyed the butterflied knobby snapper cooked over a wood fire with sobrassada, lime and curry leaves (a Queensland exclusive). The sugar-cured king salmon melted in my mouth. The seafood is sourced from the Brisbane based fish markets, The Fish Factory.
Be tempted by wood-fired grill dishes like 2gr Wagyu Hanger and the Wagyu Tomahawk, (a Darling Downs exclusive). The black Angus sirloin was cooked to perfection and served with artichoke, rappa and horseradish.

“The majority of my signature dishes feature just three or four components executed well,” he said of his personal style. “Take care of your produce and it will sing on the taste buds. Fresh produce is everything to me,” Chris said of his food philosophy.
“How a chef treats produce, from the minute he selects it, to when it enters his kitchen, is prepared and is served on the plate, should be reflected in the taste and appearance of the final dish. Even an Oyster, that tiny bit of indulgence that is over in a split second of eating, takes three years to grow and develop! Those tiny little herbs that we use as a garnish? They are just two weeks old and can be destroyed or mishandled in a second.”
Pony Dining is the perfect place for a first date – with an amazing view of the Storey Bridge and the Brisbane River. We sat right next to the pass so we could see all of the action in the kitchen.
Pony Dining is currently offering a chef’s selection menu for $79 per person. You can add matching wines from Wine and Hammer for an additional $45 per person.
