Susie Burrell has created an easy and healthy festive recipe with peanuts, dates, coconut, almond meal, white chocolate and sprinkles. She recommends serving them as an antidote to the mid-afternoon Christmas crash.
“Peanuts help to sustain your energy supply and boost your immune system, so adding these to any recipe will provide multiple benefits to your ravenous guests come lunchtime on Christmas Day,” said Susie.
Peanut Butter Snowballs Recipe
Time: 1.5 hours
Makes 14 snowballs
Ingredients
1 cup Mayver’s Crunchy Peanut Butter
1 cup peanuts, roughly chopped
1 cup Medjool dates, pitted
1 cup desiccated coconut
1/4 cup cocoa powder
1/2 cup almond meal
300g white chocolate melts
1 tbsp sprinkles, if desired
Method
- Place the peanut butter, peanuts, dates, coconut, cocoa, almond meal and a sprinkle
of salt in a food processor and blitz until well combined. - Using damp hands, roll the mixture into 14 balls (roughly dessert-spoon size). Place in
the freezer for 1 hour to firm. - Meanwhile, place the white chocolate in a small microwave-safe bowl and melt at 30
second intervals. Stir chocolate in between intervals or until melted and smooth. - Working one ball at a time, place the ball on a skewer and dip the ball into the melted
chocolate. Remove from the skewer and place on a lined tray. Repeat with all
remaining snowballs and drizzle over any remaining white chocolate. Sprinkle over a
small amount of sprinkles. Return to the freezer for 15 minutes or until the chocolate is
set.
