Here’s a recipe for Kolokithokeftedes – a delicous zucchini, mint and feta fritters with a light, potato garlic skordalia created by Nostimo Chef in Residence and Michelin-star trained chef, Alex Xinis.
Kolokithokeftedes – Zucchini Fritters Recipes
Ingredients
200 grams grated zucchini (roughly one)
1 tsp salt
50 grams crumbled feta
½ bunch spring onion finely sliced
1 egg
¼ bunch mint chopped
¼ bunch dill chopped
1 tbsp Panko breadcrumbs
50 grams plain flour
15 grams baking powder
Method
- Grate the zucchini, spread on a tray and season with salt.
- Leave for 15 minutes and using a clean tea towel, squeeze out excess liquid
- Place in a bowl and add remaining ingredients, mix well.
- Heat oil and fry bite-size spoonfuls until golden brown, checking inside is cooked
- Serve on top of Skordalia
Potato Skordalia Recipe
Ingredients
350 grams dutch cream potato, boiled until soft
60 grams garlic finely chopped
15 grams salt
200 grams canola oil
20 grams white vinegar
50 grams Dijon mustard
Method
- Blend potato, garlic, mustard, vinegar and salt
- Gradually add oil to thicken and emulsify
