
Eat Your Greens is Pete Evans’ twelfth published cookbook. This book is packed with over 130 plant-based recipes, which is perfect if you are vegetarian or just want to add some more vegetables into your diet.
The book is divided into eight sections called breakfast, salads, global favours, comfort food, bread, snacks, ferments and basics. The layout of the book is first class – with a flexible spine, full colour illustrations and easy to follow instructions.
Each recipe includes a full list of ingredients, instructions, description and serving side. The legend is based on food superstars – this covers nutrient-dense superstar fruit, vegetables and herbs.
My favourite recipes are sweet potato waffles with guacamole and fried egg, Greek-style broccoli salad, eggplant parmigiana, and charcoal bread.
Be tempted by recipes like Vietnamese pickled carrot, cucumber and daikon, cauliflower pakora with coriander and mint sauce, duck fat roasted Jerusalem artichokes with watercress and olives, French braised peas with cos lettuce and bacon, Cumin-roasted Dutch carrots with tahini dressing.
Don’t miss trying out the macadamia fat bomb bread which features in his latest documentary, ‘The Magic Pill’.
The end of the book contains basic recipes for staples like bone broths, cashew ‘cheese’, cauliflower rice, coconut flour pita breads, coconut yoghurt, macadamia ‘cheese’, paleo butter, sauerkraut and whipped coconut cream.
