Alphonsus Pizza from The Glen Hotel

Alphonsus Pizza at The Glen Hotel is serving award-winning pizzas by Brisbane’s own Pizzaiolo (Pizza Chef), Jim Parker.

Jim was crowned at the 2018 Dairymont Australian Pizza Championships in Sydney as:

Winner of the Dessert category with the Sugar Plum Fairy pizza (above) – Pink lemonade dough, sugar plum sauce, Turkish delight, chocolate cups filled with ice-cream and musk sticks and topped with rose Persian fairy floss.

Overall runner-up of the Australian Pizza Championships with the Pistachio & Wagyu pizza (below) – Homemade rocket and pistachio pesto, Wagyu beef bresaola, Fior di latte, cherry tomatoes, pistachio crumb, fresh rocket and smoked buffalo mozzarella.

Jim has been making pizzas for over 15 years, and his passion and talent for creating authentic Neapolitan pizzas shines through.

“The competition allows pizza chefs nationwide to showcase their most tasteful pizzas across five categories – seafood, meat/poultry, vegetarian/gluten free, sponsors product and dessert,” said Jim.

“Competition entries can be an exotic twist on an old favourite, or a completely original creation, with the final product judged by an internationally recognised panel of chefs on the creation’s originality, balance, creativity and excitement factor.”

“For my dessert entry, I created an original pizza inspired by fairy floss – the pink lemonade dough took two to three months to perfect alone!”

These two pizzas just hit the top of every Brisbane foodies’ wish list.

Alphonsus Pizza opened at The Glen Hotel in October 2017, bringing a taste of Italy to Brisbane’s south side. Alphonsus Pizza is an authentic Italian pizzeria which plates up classic twists (think nine-inch dessert pizzas) straight from two stunning Stefano Ferrara stone pizza ovens (built brick-by-brick) shipped straight from Naples.
