Opal is an intimate and exclusive signature restaurant by Josue Lopez.
Opulent and unique, it will be a culinary jewel, showcasing Josue’s passion for fusing art with taste, using local, seasonal and indigenous ingredients.
“I have watched Brisbane, it’s dining scene and food culture grow and develop significantly over the years, and I am really excited to be opening this style of restaurant now. Australian chefs are cementing an internationally recognised identity for exciting culinary creations using native ingredients, and I think a lot of people want our chefs to continue pushing the boundaries and offer something that has never been done before and is truly delicious.” Josh said
Lopez also added that opals were multi-faceted, each one being completely unique, which is something he is looking to provide in the dining experience. “Every time you look at an opal you see something different, a different colour, a spark from new light – and this originality and refinement is what we hope to offer our guests.”
- “Minnjeribah” – a dish that focusses on Moreton Bay’s ecology, specifically North Stradbroke Island. A seafood-centric dish plated on a ceramic hand-made and inspired by the shoreline with corrugations fashioned by the waves.
- “Father and Son” – when it comes to telling a story around beef dishes, this approach brings together two unique elements of age, plated in two different styles to enhance each other. There will also be a play on words with a flora component as well.
- “Fire of the desert” – a physical interpretation of the translation of opal and a dish which will set the tone for what diners should expect when dining in this wonderful space. Bespoke flatware is again another foundation for creativity and will, therefore, try to capture the multifaceted gemstones’ radiance and beauty.
The restaurant features a full-sized wine cellar, housing an extensive selection of local and international wines to match perfectly with your meal. There is an exquisite private dining room
for up to 14 people to provide a secluded space for an important client dinner or special occasion.
