On Thursday, 21 June 21 2018 Brisbane’s acclaimed riverside restaurant Stokehouse Q will host a five-course celebration of local produce, paired, and the growers who dedicate their lives to cultivating these unique and rich ingredients. Of course, the menu is perfectly paired with beverages.
Executive Chef Richard Ousby will host the dinner and has personally visited over 10 local producers from the Granite Belt, Southern Downs, Sunshine Coast and the Scenic Rim to curate this menu, and all these growers will feature in the five-course culinary adventure.
“As a chef I have always been inspired by Australian produce. I honestly believe our local produce is some of the very best in the world, and now to be able to take it to this level, it’s inspirational to me. Being able to visit the farms and connect candidly with the families that make and cultivate the food on our plates is a really moving experience,” said Ousby.
“Flavour is driven by careful thought, care, passion, and love for the craft – there is something so special about being invited into someone’s home and life, to live and breathe their craft for a day. One of the most exciting parts of my job is tasting the new season pears from Jeff McMahon’s farm just out of Stanthorpe, or a beetroot fresh from the ground at Falls Farm in Mapleton. The flavour of a beetroot straight out of the ground is like a lightbulb moment. Growers like these are absolute champions for brilliant food.”
Local produce set to star at the event includes
Each producer has their own story and during this special flavour-based event, these stories will be celebrated, both in Chef Ousby’s menu and as told by the producers themselves. It will be a true tribute to local produce and local producers.
Ian and Margie Douglas of the Scenic Rim for example have led the way in the boutique finger lime market, having devoted the past 10 years of their lives to creating the perfect product for market. So much so in fact, that they have recently released pre-packaged, ready to serve Lime Caviar pearls, which are set to revolutionize the Finger Lime industry.
This is the deep-seated passion that Chef Ousby strives to capture in the Stokehouse menu and will shine at the ‘From Around Here’ dinner in June.
